Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with paper liners
In a large mixing bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt
In a separate bowl, whisk together the eggs, sugar, milk, vegetable oil, and vanilla extract until well combined
Pour the wet ingredients into the dry ingredients and stir until just combined
Be careful not to overmix; a few lumps are okay
Gently fold in the semi-sweet chocolate chips
Fill each muffin cup about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean
Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely
