Ingredients:
- 1 cup apple cider
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup unsalted butter, melted
- 1/4 cup plain Greek yogurt
- 1 large egg
- 1 tsp vanilla extract
- For coating:
- 1/2 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 cup unsalted butter, melted
Instructions:
Grease a mini muffin tin and preheat the oven to 350 degrees Fahrenheit 175 degrees Celsius
Simmer the apple cider in a saucepan over medium heat for 15 to 20 minutes, or until it reduces to 1/2 cup
Give it time to cool
Mix the flour, sugar, baking soda, baking powder, salt, nutmeg, cinnamon, and cloves in a sizable mixing bowl
Combine the reduced apple cider, Greek yogurt, melted butter, egg, and vanilla extract in a separate bowl
Mixing until just combined, pour the wet ingredients into the dry ingredients
Take care not to blend too much
Fill each of the mini muffin tins cavities to about two thirds full with batter using a spoon
When a toothpick inserted into a donut hole comes out clean, bake for 10 to 12 minutes
