Moon Pie Cookies Recipe

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 cup marshmallow creme
  • 1 cup semisweet chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a bowl, whisk together the flour, cocoa powder, baking soda, and salt

In another bowl, cream together the softened butter and granulated sugar until light and fluffy

Beat in the egg and vanilla extract until well combined

Gradually mix in the dry ingredients and buttermilk, alternating between the two, beginning and ending with the dry ingredients

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart

Bake in the preheated oven for 10-12 minutes, or until the cookies are set

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely

Once the cookies are completely cool, spread marshmallow creme onto the flat side of half the cookies

Top with the remaining cookies to create cookie sandwiches

Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each interval until smooth and melted

Dip half of each cookie sandwich into the melted chocolate, allowing any excess to drip off

Place the dipped cookies on a parchment-lined tray and let them sit until the chocolate is set

Instructions:

Preheat oven to 400F 200C

Place salmon fillets on a baking sheet lined with parchment paper

Place lemon slices on top of each fillet

Bake salmon in the preheated oven for 12-15 minutes or until cooked through

While salmon is baking, mix cherry tomatoes, chopped basil, and balsamic vinegar in a bowl

Serve baked salmon topped with tomato and basil mixture

Everything Bagel Dutch Baby with Lox

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup whole milk
  • 4 large eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons everything bagel seasoning
  • 4 tablespoons unsalted butter
  • 4 ounces smoked salmon lox
  • 2 tablespoons cream cheese
  • 2 tablespoons chopped fresh dill
  • Lemon wedges for serving

Instructions:

Preheat your oven to 425F 220C

In a blender, combine the flour, milk, eggs, salt, and black pepper

Blend until smooth

Place a 10-inch ovenproof skillet on the stovetop and melt 2 tablespoons of butter over medium-high heat

Pour the blended batter into the hot skillet and sprinkle the grated Parmesan cheese evenly over the top

Transfer the skillet to the preheated oven and bake for about 20 minutes or until the Dutch baby is puffed and golden brown

While the Dutch baby is baking, in a small bowl, mix the cream cheese with 1 tablespoon of chopped dill

Remove the Dutch baby from the oven and immediately sprinkle the everything bagel seasoning over the top

Tear the smoked salmon into pieces and arrange it on top of the Dutch baby

Drop small spoonfuls of the dill cream cheese mixture over the salmon

Return the skillet to the oven for another 2-3 minutes to warm the salmon and cream cheese

Remove from the oven, sprinkle with the remaining tablespoon of chopped dill, and serve with lemon wedges
