Give these rich vegan chocolate cookies a try. They are filled with gooey caramel-filled chocolates and have sea salt on top. Theyre great for when you want something sweet
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup vegan butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- Vegan Rolos or caramel-filled chocolates
- Sea salt, for sprinkling
Instructions:
Warm your oven up to 350F 175C and put parchment paper on a baking sheet
Whisk the cocoa powder, baking powder, salt, and flour together in a bowl
In a different bowl, beat the vegan butter, brown sugar, and white sugar until they are fluffy and light
Mix the applesauce and vanilla extract into the mixture that has been creamed until everything is well mixed together
Mix the dry ingredients into the wet ingredients one at a time until a dough forms
Take about a tablespoon of dough and press it down into a disc shape
In the middle, put a vegan Rolo or a chocolate with caramel in it
Then, wrap the dough around it and roll it into a ball
Do it again with the rest of the chocolates and dough
Cover the baking sheet with parchment paper and place the dough balls on it
Leave some space between each cookie
Put it in an oven that is already hot and bake for 10 to 12 minutes, or until the edges are set
As soon as you take the cookies out of the oven, add a pinch of sea salt to each one
Let the cookies cool for a few minutes on the baking sheet before moving them to a wire rack to cool all the way
