Ingredients:
- 2 cups diced squash butternut or acorn
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin powder
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup cooked black beans
- 4 large flour tortillas
- 1 cup crumbled goat cheese
- 1/2 cup fresh cilantro, chopped
- Sour cream optional, for serving
- Salsa optional, for serving
Instructions:
Turn on the oven and heat it up to 400F 200C
Sprinkle 1 tablespoon of olive oil over the diced squash on a baking sheet
Add salt, pepper, cumin powder, and chili powder to taste
Toss the squash to cover it all
Put the squash in an oven that has already been heated and roast it for 20 to 25 minutes, or until its soft and slightly caramelized
Take it out of the oven and set it aside
Put the last tablespoon of olive oil in a large skillet and heat it over medium-low heat
Put in the diced onion and cook for three to four minutes, until it turns clear
Put in the minced garlic and cook for one more minute, until the garlic smells good
Add the cooked black beans and roasted squash and mix them in
Add two to three more minutes of cooking and keep going until everything is hot
To make the flour tortillas soft, heat them in a dry pan or the microwave for a few seconds
Give each tortilla an equal amount of the squash and black bean mixture, leaving some room at one end to fold it
Break up some goat cheese and chop some cilantro to put on top of each serving
To make burritos, fold the sides of each tortilla in and then roll them up tightly
You can cook the burritos in a skillet for a few minutes on each side to melt the cheese and make the tortillas crisp
If you want, you can serve the Squash and Goat Cheese Burritos with sour cream and salsa
Enjoy your burritos, they taste great
