Ingredients:
- 1 cup black walnuts, chopped
- 1 cup brown sugar
- 1/2 cup coconut cream
- 2 tbsp vegan butter
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
Line a baking sheet with parchment paper
In a medium saucepan over medium heat, combine the brown sugar, coconut cream, vegan butter, and salt
Stir constantly until the mixture reaches 240F 115C on a candy thermometer, about 10-15 minutes
Remove from heat and stir in the vanilla extract and black walnuts
Quickly drop spoonfuls of the mixture onto the prepared baking sheet
Let cool completely before serving
