Tender chicken breasts, flavorful cauliflower, and briny olives come together in this Paleo-friendly recipe to make a filling and healthy dinner.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 head cauliflower, cut into florets
- 1 cup green olives, pitted and halved
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
Instructions:
Preheat oven to 400F 200C
In a large mixing bowl, toss cauliflower florets with minced garlic, olive oil, dried oregano, paprika, salt, and pepper until evenly coated
Spread cauliflower mixture evenly on a baking sheet lined with parchment paper
Place chicken breasts on top of the cauliflower mixture
Sprinkle halved olives over the chicken and cauliflower
Bake in preheated oven for 25-30 minutes, or until chicken is cooked through and cauliflower is tender
Serve hot and enjoy
