Ingredients:
- 2 cups gluten-free rolled oats
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup almond butter
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions:
Preheat the oven to 350F 175C
Line an 8x8 inch baking dish with parchment paper, leaving an overhang on the sides for easy removal
In a large bowl, mix together oats, coconut flour, baking soda, and salt
In another bowl, whisk together almond butter, maple syrup, applesauce, egg, and vanilla extract until smooth
Add wet ingredients to dry ingredients and mix until well combined
Gently fold in blueberries
Press the mixture evenly into the prepared baking dish
Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean
Allow the bars to cool completely in the pan before cutting into squares
