Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz corn, drained
- 1 can 14
- 5 oz diced tomatoes
- 1 cup beef broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped fresh cilantro optional
Instructions:
Brown the ground beef in a pan over medium-low heat until its done
Get rid of extra fat
Put the minced garlic and chopped onion into the pan with the beef
Add the onions and cook for another two to three minutes, until they get soft
Put the slow cooker on high and add the cooked beef, onion, and garlic
The kidney beans should be drained
Then, the corn, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper should be added
Use a stir to mix
Put the lid on top and cook on low for 6 to 8 hours or high for 3 to 4 hours
If you want, you can serve it hot and top it with shredded cheddar cheese and chopped cilantro
