Ingredients:
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1 cup marshmallow creme
- 1 cup semisweet chocolate chips
Instructions:
Preheat the oven to 350F 175C and line a baking sheet with parchment paper
In a bowl, whisk together the flour, cocoa powder, baking soda, and salt
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the egg and vanilla extract until well combined
Gradually mix in the dry ingredients and buttermilk, alternating between the two, beginning and ending with the dry ingredients
Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart
Bake in the preheated oven for 10-12 minutes, or until the cookies are set
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
Once the cookies are completely cool, spread marshmallow creme onto the flat side of half the cookies
Top with the remaining cookies to create cookie sandwiches
Melt the chocolate chips in a microwave-safe bowl in 20-second intervals, stirring between each interval until smooth and melted
Dip half of each cookie sandwich into the melted chocolate, allowing any excess to drip off
Place the dipped cookies on a parchment-lined tray and let them sit until the chocolate is set
