- 1/4 cup pure maple syrup
- 1/4 cup melted coconut oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
Instructions:
Preheat your oven to 325F 160C and line a baking sheet with parchment paper
In a large mixing bowl, combine the gluten-free rolled oats, chopped nuts, sunflower seeds, pumpkin seeds, dried cranberries, and dried apple slices
In a separate small bowl, whisk together the melted coconut oil, pure maple syrup, ground cinnamon, vanilla extract, and a pinch of salt
Pour the liquid mixture over the dry ingredients in the large mixing bowl and stir well until everything is evenly coated
Spread the granola mixture evenly on the prepared baking sheet
Bake in the preheated oven for 20-25 minutes, or until the granola is golden brown, stirring once halfway through to ensure even baking
Remove from the oven and let it cool completely on the baking sheet
It will crisp up as it cools
Once cooled, break the granola into clusters and store it in an airtight container
