This hearty Smokey Chili Mac Soup has all the rich flavors of a classic chili and all the comforting goodness of macaroni. Adding smoked paprika gives it a nice smokey flavor, making it a great comfort food for cold days.
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 1 can 15 oz kidney beans, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 can 4 oz diced green chilies
- 1 cup elbow macaroni
- 4 cups beef broth
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- Fresh cilantro for garnish
Instructions:
In a large pot, brown ground beef over medium heat
Add diced onions and minced garlic, saut until softened
Stir in diced tomatoes, kidney beans, black beans, and diced green chilies
Add beef broth, chili powder, cumin, smoked paprika, salt, and pepper
Bring the soup to a simmer and add elbow macaroni
Cook until macaroni is tender
Serve hot, garnished with shredded cheddar cheese and fresh cilantro
